Convenient and easy to make, these snack treats can be customized to your liking. For the add-ins you can make it all one flavour or a combo. The choice is yours!
Ingredients
4 cups old fashioned oats
1/4 cup flour (whole-wheat, all-purpose, gluten-free, or almond – your choice)
1/2 cup shredded unsweetened coconut
1/3 cup brown sugar
1 cup add-ins (chocolate chips, nuts, seeds or dried fruit like cranberry, cherry, apricots, etc.)
1/2 teaspoon kosher salt
1/2 cup vegetable, canola, or avocado oil
1/2 cup honey
1 teaspoon vanilla extract
Preparation
Preheat oven to 325 F. Line a baking sheet with parchment and set aside.
In a large bowl, combine the first 6 ingredients.
In a separate bowl, whisk together the oil, vanilla and honey.
Drizzle the wet ingredients over the oat mixture. Using a rubber spatula or wooden spoon, thoroughly combine the ingredients. Make sure the oats are well-coated to ensure a perfect granola bar.
Place granola mixture onto the lined a baking sheet and shape into a rectangle: approximately 13 x 9 x 1 inch thick.
Bake for 30-40 minutes until just starting to get golden.
Allow to cool completely before cutting (this is key!). Cut into bars (3 x 1 inch). Pssst… you really need to make sure to cool completely to ensure easy cutting and that your bars don’t fall apart!
