Buckwheat Banana Bread (GF)

These no-bake energy balls are perfect if you're running out of fuel and need a little pick-me-up, or want to have an easy snack on hand!

Ingredients

  • 1 ½ cups buckwheat flour

  • ½ tsp baking soda

    1 tsp baking powder

  • 1 tsp cinnamon

  • ¼ tsp salt

  • 2 large eggs

  • 1/3 cup melted butter or coconut oil

  • 3 really ripe bananas (plus one banana on top)

  • 1/3 cup dairy or non-dairy milk (oat, almond, rice, etc.)

    ¼ cup maple syrup or honey

  • 1 tsp vanilla extract

Preparation

  1. Preheat oven to 350F

  2. Line loaf pan with parchment

  3. In a large bowl, mash bananas

  4. Add eggs and whisk well

  5. Add melted butter or oil, milk, sweetener, and vanilla. Mix well

  6. In a separate bowl, mix all the dry ingredients together

  7. Gradually fold the dry ingredients into the wet ingredients

  8. Pour into prepared loaf pan

  9. Cut one banana into lengthwise strips and place it on top of the batter

  10. Bake for 40 – 50 minutes until a skewer inserted comes out clean. Check it at 40 minutes, and keep adding 5 minutes until done

  11. Let cool in pan

  12. Remove Banana Bread from the pan, slice, and serve!
